Instructions
1. In a medium, microwavable bowl, mash the banana with a fork until smooth.
2. Whisk in the egg, brown sugar, milk, oil, and vanilla extract until well blended.
3. In a separate small bowl, combine flour, baking powder, and salt.
4. Fold dry ingredients into wet ingredients until the batter is smooth (do not overmix).
5. Microwave on high for 90 seconds. Check for doneness; cook an additional 20 seconds if needed.
