Ingredients
Cottage cheese – ½ cup
Egg – 1
Almond flour – 2 tbsp
Baking powder – ½ tsp
Cinnamon (optional) – ¼ tsp
Vanilla extract (optional) – ¼ tsp
Sweetener or maple syrup (optional) – 1–2 tsp
Chocolate chips or berries (optional) – 1 tbsp
Instructions
1. In a microwave-safe mug, whisk together cottage cheese and egg until smooth.
2. Stir in almond flour and baking powder.
3. Add cinnamon, vanilla extract, or sweetener if using.
4. Fold in chocolate chips or berries if desired.
5. Microwave on high for 60–90 seconds. The cake should rise and look set.
6. Let cool for 1–2 minutes before enjoying warm.
7. Serve straight from the mug or flip onto a plate and top with yogurt, almond butter, or fruit.
