Ingredients
All-purpose flour – 4 tbsp
Sugar (white or coconut) – 2–3 tbsp
Baking powder – ¼ tsp
Milk (dairy or plant) – 4 tbsp
Neutral oil (or melted butter) – 1 tbsp
Vanilla extract – ½ tsp
Salt – Pinch
Mixed berries (fresh or frozen) – ⅓ cup
Chocolate chips (optional) – 1 tbsp
Instructions
1. Whisk flour, sugar, baking powder, and salt in a 16oz microwave-safe mug.
2. Stir in milk, oil, and vanilla extract until the batter looks smooth and thick.
3. Fold in mixed berries. Sprinkle chocolate chips on top if using.
4. Microwave on high for 70–95 seconds. Stop when the top looks set and the center glistens.
5. Let rest for 30 seconds to finish cooking.
6. Serve warm with your favorite topping like yogurt, whipped cream, or ice cream.
Notes
Frozen berries work perfectly—no need to thaw.
To create a richer version, add 1 tbsp cocoa powder with the dry ingredients.
For brightness, use only raspberries and add a little lemon zest.
Avoid overmixing to keep the texture light.
Stop the microwave when the center still looks a bit glossy for best results.
