Ingredients
5 1/2 tablespoons Bisquick
4 tablespoons sugar
3 tablespoons oil
3 1/2 tablespoons milk
1 medium egg
Splash of vanilla
8 blueberries
Instructions
1. Add Bisquick, sugar, oil, milk, egg, and vanilla into an oversized microwave-safe mug.
2. Whisk until mostly smooth, leaving only very small Bisquick lumps.
3. Gently fold in the blueberries.
4. Microwave for 1 1/2 to 2 minutes, depending on microwave strength.
5. Check the center with a knife; if it comes out clean, the cake is done.
6. Let the mug cake cool briefly before eating.
Notes
Use a wide mug to prevent overflow.
Do not overmix the batter.
The outside may look slightly wet; this is normal for mug cakes.
