Ingredients
4 tbsp all-purpose flour
1/4 tsp baking powder
1 1/2 tsp vegetable oil
3 tbsp fat-free milk
2 tsp granulated sugar
1/4 tsp peppermint extract
1/8 tsp vanilla extract
2–3 drops red food coloring
Instructions
1. Mix flour, baking powder, oil, milk, sugar, peppermint, and vanilla until smooth
2. Divide batter evenly into two bowls
3. Add red food coloring to one bowl and mix
4. Lightly grease a microwave-safe mug
5. Layer plain and red batter alternately in the center of the mug
6. Microwave for about 1 minute until top is dry to the touch
Notes
Measure peppermint carefully to avoid overpowering flavor
