Description
This cottage cheese banana bread mug cake is high in protein, naturally sweet, and ready in just 5 minutes. A cozy single-serve treat.
Ingredients
½ ripe banana, mashed
2 tablespoons cottage cheese
1 egg or flax egg
1 tablespoon oat flour or almond flour
½ teaspoon baking powder
½ teaspoon vanilla extract
Optional: pinch of cinnamon
Optional: 1 tablespoon chocolate chips
Optional: drizzle of maple syrup
Instructions
1. Mash the banana in a microwave-safe mug until smooth.
2. Add cottage cheese, egg, and vanilla extract. Mix well.
3. Stir in oat flour and baking powder until fully combined.
4. Fold in cinnamon or chocolate chips if using.
5. Microwave on high for 60–90 seconds, until the top is set.
6. Let cool for 1–2 minutes before enjoying.
