2 tablespoons cottage cheese, blended
1 tablespoon milk
1 tablespoon maple syrup
¼ cup + 2 tablespoons all-purpose flour
¼ teaspoon baking powder
¼ teaspoon salt
1 tablespoon melted butter
1 tablespoon coconut sugar
½ teaspoon cinnamon
2 tablespoons powdered sugar
½ teaspoon milk
¼ teaspoon vanilla extract

Instructions

Blend the cottage cheese until smooth using a blender or immersion tool.
In a mixing bowl, combine blended cottage cheese, milk, maple syrup, and vanilla extract.
Add flour, baking powder, and salt, mixing until a soft, non-sticky dough forms.
On a lightly floured surface, roll dough into a 4×6-inch rectangle.
Brush the dough with melted butter, then sprinkle evenly with coconut sugar and cinnamon.
Cut the dough into 5–6 strips and roll each into a cinnamon swirl.
Place rolls in a greased ramekin or air fryer-safe dish.
Bake at 350°F for 10–15 minutes or air fry at 330°F for 6–8 minutes, until golden and cooked through.
In a separate bowl, whisk powdered sugar, milk, and vanilla until smooth to make the glaze.
Drizzle icing over warm rolls before serving.

Notes

If the dough is sticky, add 1 tablespoon of flour.
Use parchment paper for easier cleanup.
Microwave icing for 10 seconds to smooth out lumps.
Best served warm and fresh out of the oven or air fryer.
Add cream cheese to the glaze for a tangy twist.
