1 tablespoon honey or maple syrup
1/4 teaspoon baking powder
1/4 teaspoon vanilla extract
Pinch of salt
Instructions
1. Blend the cottage cheese until completely smooth.
2. In a microwave-safe mug, mix flour, baking powder, and salt.
3. Add blended cottage cheese, sweetener, and vanilla extract.
4. Stir gently until just combined.
5. Microwave on high for 60 to 90 seconds depending on microwave strength.
6. Let the cake rest for 1 minute before serving.
Notes
Do not overcook or the cake may turn rubbery.
Blend cottage cheese thoroughly for smooth texture.
For flourless version, replace flour with vanilla protein powder.
