Ingredients
4 tablespoons all-purpose flour (or whole wheat/gluten-free mix)
2 tablespoons sugar (white, coconut, or erythritol)
1½ tablespoons melted butter or oil (or vegan butter)
4 tablespoons eggnog
½ teaspoon baking powder
1–2 pinches ground nutmeg
Instructions
1. In a small bowl, whisk together flour, sugar, nutmeg, and baking powder.
2. Add the eggnog and melted butter (or oil), stirring until smooth.
3. Pour the batter into a microwave-safe mug, filling it halfway.
4. Microwave on high for 60 to 90 seconds, checking after 60 seconds.
5. Cool for 1 minute, then top with whipped cream or a dusting of nutmeg.
Notes
You can substitute regular eggnog with dairy-free almond or oat-based eggnog.
Add a spoonful of white chocolate chips before cooking for a creamy surprise.
Serve warm with whipped cream, ice cream, or a caramel drizzle.
