200 g full-fat soft cream cheese50 g salted caramel sauce15 g icing sugar125 g unsalted butter175 g dark brown sugar1 medium egg1 tsp vanilla extract300 g plain flour1.5 tsp ground ginger0.5 tsp ground cinnamon0.5 tsp ground nutmeg0.5 tsp bicarbonate of soda0.5 tsp sea salt200 g white chocolate chips

Instructions

1. Mix cream cheese, caramel sauce, and icing sugar until smooth

2. Scoop into portions and freeze for at least 2 hours

3. Cream butter and sugar until smooth

4. Add egg and vanilla and mix well

5. Add flour, spices, baking soda, and salt to form dough

6. Fold in white chocolate chips

7. Wrap dough around frozen filling and seal completely

8. Bake at 200°C (180°C fan) for 11–13 minutes

9. Cool fully, then chill to set the cheesecake center
