Ingredients
1 large egg
2 tablespoons cottage cheese
2 tablespoons almond flour
1 tablespoon maple syrup
¼ teaspoon vanilla extract
¼ teaspoon baking powder
Pinch of cinnamon (optional)
1–2 tablespoons chocolate chips or berries (optional)
Instructions
Add egg, cottage cheese, maple syrup, and vanilla to a large microwave-safe mug.
Whisk until smooth.
Add almond flour, baking powder, and cinnamon (if using). Stir gently until fully combined.
Fold in half of the chocolate chips or berries, if using.
Microwave on high for 70–80 seconds.
Let rest for 1–2 minutes to allow texture to set.
Top with remaining chocolate chips or a spoonful of yogurt, then enjoy.
Notes
Use a 12 oz mug or larger to prevent overflow.
For a smoother texture, blend cottage cheese before mixing.
Coconut flour can be used in place of almond flour (use only 1 tablespoon).
Store uncooked batter in the fridge for up to 12 hours.
Microwave power varies always start with 70 seconds and adjust in 10-second increments.
