Ingredients
5 tbsp all-purpose flour
5 tbsp granulated sugar
1/8 tsp baking powder
1/2 tsp espresso powder
1 large egg
3 tbsp milk
3 tbsp oil
2 tbsp mini bittersweet chocolate chips
Instructions
1. Add all ingredients except chocolate chips to a microwave-safe mug
2. Whisk until batter is smooth with no lumps
3. Sprinkle chocolate chips evenly over the batter
4. Microwave for about 1 minute 40 seconds
5. Center should be set though edges may look slightly moist
6. Let cool briefly before frosting
7. Whip cream and sugar until peaks form and frost if desired

Espresso powder enhances chocolate flavor without overpowering
Do not overcook or cake will dry out
