Ingredients
1/4 cup almond flour
1 tablespoon coconut flour
2 tablespoons butter, melted
2 tablespoons erythritol or monk fruit sweetener
1/2 teaspoon baking powder
1 large egg
2 tablespoons unsweetened almond milk
1/4 cup shredded Granny Smith apple
1/2 teaspoon pure vanilla extract
1 tablespoon chopped walnuts (optional)
Pinch of cinnamon or nutmeg (optional)
Instructions
1. Melt butter in a microwave-safe mug.
2. Add sweetener, almond flour, coconut flour, and baking powder; stir to combine.
3. Mix in the egg, almond milk, and vanilla extract until smooth.
4. Fold in shredded apple and chopped walnuts if desired.
5. Microwave for 90 seconds; if center is still soft, heat for another 10–15 seconds.
6. Let cool for one minute to set, then top with whipped cream, caramel drizzle, or chopped nuts.
Notes
To make it dairy-free, use coconut oil instead of butter.
Add 1 teaspoon cocoa powder for a chocolate twist.
