Instructions

1. Preheat oven to 350°F (176°C) and prepare three 8-inch cake pans with parchment paper and greased sides.

2. Whisk together flour, baking powder, baking soda, and salt in a medium bowl.

3. Beat butter, oil, sugar, and vanilla extract until light and fluffy.

4. Add eggs one at a time, mixing well after each addition.

5. Mix in half of the dry ingredients until mostly combined.

6. Add milk, lemon juice, and lemon zest and mix until smooth.

7. Add the remaining dry ingredients and mix until the batter is fully combined.

8. Divide batter evenly between cake pans and bake for 22–25 minutes.

9. Allow cake layers to cool completely before frosting with lemon cream cheese frosting.
