Ingredients

1 cup butter, slightly cold, cubed2 cups sugar2 eggs1 teaspoon vanilla extract1 1/2 tablespoon fresh lemon juice1 1/2 to 2 tablespoons lemon zest3 cups flour1 1/4 teaspoon baking powder1/2 teaspoon baking soda1/2 teaspoon salt2 cups white chocolate chips

Instructions

1. Preheat oven to 350°F.

2. Cream butter and sugar for 4–5 minutes until light and fluffy.

3. Add eggs one at a time, mixing well.

4. Stir in vanilla, lemon juice, and lemon zest.

5. Mix in flour, baking powder, baking soda, and salt until combined.

6. Fold in white chocolate chips.

7. Scoop dough onto lined baking sheet.

8. Bake for 9–12 minutes until edges are lightly golden.

Notes

Use fresh lemon zest for best flavor.

Do not overbake for soft cookies.

Optional: add sugar on top for crunch.
