4 tbsp coconut milk
1 1/2 tbsp shredded coconut
2 tbsp chopped ripe mango
Instructions
1. Mix flour, sugar, baking powder, and coconut milk in an oversized microwave-safe mug until smooth
2. Stir in shredded coconut and 1 tablespoon of mango
3. Spread remaining mango pieces over the top
4. Microwave for about 1 minute until set
5. Let rest briefly before eating
Notes
Use very ripe mango for best sweetness
