Ingredients
1 tablespoon maple syrup (or honey or agave)
2 teaspoons water
2 teaspoons vegetable oil
⅛ teaspoon salt
4 ½ tablespoons rolled oats
1 tablespoon desiccated coconut
1 tablespoon chopped pecans
Instructions
1. In a large microwave-safe mug, mix maple syrup, water, oil, salt, oats, coconut, and pecans until evenly combined.
2. Microwave for 1 minute 30 seconds, then stir well to lift any syrup from the bottom.
3. Microwave for 1 more minute or until oats turn golden brown and smell toasted.
4. Let stand for 2–3 minutes to cool and crisp up before eating.
Notes
Cooking times vary by microwave wattage; start low and increase if needed.
Use a small (6 oz) microwave-safe mug and watch closely to prevent overflow.
Add 1 tablespoon dried fruit (raisins, apricots, cranberries) after microwaving for extra flavor.
Store cooled granola in an airtight container for up to 5 days.
