2 tablespoons almond flour
1 tablespoon unsweetened cocoa powder
1 tablespoon maple syrup or honey
2 tablespoons unsweetened almond milk
1/4 teaspoon vanilla extract
1/4 teaspoon baking powder
Pinch of salt
1 teaspoon dark chocolate chips (optional)
Instructions
In a microwave-safe mug, mix the almond flour, cocoa powder, baking powder, and salt.
Add maple syrup, almond milk, and vanilla. Stir until smooth and lump-free.
Fold in chocolate chips, if using.
Microwave on high for 60 to 75 seconds until just set.
Let rest for 30 seconds before enjoying warm.
Notes
Do not overcook—microwave times vary. For extra richness, swirl in 1 teaspoon of Greek yogurt before cooking.
Omit cocoa for a vanilla version. Add cinnamon or chopped fruit for variations.
To make it nut-free, substitute oat flour and use rice milk.
