Ingredients
2 tablespoons (1oz/30g) butter
1 large egg
2 tablespoons milk
1 teaspoon pure vanilla extract
1 teaspoon almond extract (optional)
¼ cup (50g) granulated sugar
6 tablespoons flour
1/4 teaspoon baking powder
Tiny pinch of salt
Instructions
1. Place butter in a large mug and microwave for 20 to 30 seconds until melted.
2. Add the egg and whisk it in with a fork.
3. Stir in milk, vanilla, almond extract, and sugar.
4. Add flour, baking powder, and salt. Mix until smooth.
5. Microwave for 1 minute and 20 seconds.
6. Top with whipped cream and berries. Serve warm.
Notes
Replace egg with applesauce or yogurt for egg-free version.
Use coconut oil and almond milk for dairy-free option.
Best enjoyed warm. Do not overcook.
