Ingredients
2 tablespoons mashed banana (ripe)
1 tablespoon nonfat Greek yogurt
1 tablespoon oat flour
1/4 teaspoon baking powder
1/4 teaspoon vanilla extract
1 teaspoon honey or stevia (optional)
Pinch of cinnamon
Pinch of salt
1 tablespoon blueberries or diced apple (optional)
Instructions
1. Mash banana in a small bowl until smooth.
2. Add yogurt, vanilla, and honey or stevia, and mix until creamy.
3. Stir in oat flour, baking powder, cinnamon, and salt.
4. Fold in fruit if using, then pour batter into a 10–12 oz microwave-safe mug.
5. Microwave on high for 60 seconds until top is set.
6. Let rest 1 minute before serving.
Notes
Use ripe banana for natural sweetness and a fluffy texture.
Microwave times vary; start with 60 seconds and adjust as needed.
Top with a spoon of yogurt or a few berries under 30 extra calories.
