Instructions
1. Lightly grease a 9 inch pie plate.
2. Crush Lotus cookies into fine crumbs.
3. Mix crumbs with melted butter.
4. Press mixture into bottom and sides of pie plate.
5. Refrigerate crust while preparing filling.
6. Beat whipping cream until stiff peaks form.
7. Beat cream cheese, Biscoff spread, powdered sugar, vanilla and cinnamon until smooth.
8. Fold whipped cream into the mixture.
9. Spread filling into prepared crust.
10. Refrigerate pie at least 4 hours.
11. Beat whipping cream for topping until medium peaks form.
12. Spread whipped cream over chilled pie.
13. Warm Biscoff spread slightly and drizzle over top.
14. Slice and serve chilled.
Notes
Lotus cookies may be replaced with graham cracker crumbs.
One jar of Biscoff spread is enough for filling and topping.
Store pie covered in refrigerator up to four days.
