Instructions
1. Add coconut oil, sugar, soy milk, and vanilla extract to mug; mix well.
2. Add flour, baking powder, and salt; stir until combined.
3. Fold in diced peaches; top with remaining fruit pieces.
4. Microwave for 1 minute 15 seconds on high.
5. Let cool for 1 minute, add ice cream or syrup, and enjoy.
Notes
Use neutral oils if you prefer; coconut oil adds flavor depth.
Try brown sugar or maple syrup for a richer taste.
For oil-free, use applesauce or cashew butter.
