Instructions

1. Scoop 3 1/2 tablespoons pumpkin ice cream and melt it in the microwave for about 25 seconds until smooth.

2. Add flour, baking powder, sugar, oil, egg, and melted pumpkin ice cream into an oversized microwave-safe mug.

3. Mix the ingredients with a small whisk or fork until the batter becomes smooth and thick.

4. Microwave the mug cake for about 1 1/2 minutes until a knife inserted into the center comes out mostly clean.

Notes

Use a large mug so the cake has room to rise.

Do not overcook the mug cake or it may become rubbery.
