Ingredients
3/4 cup unsalted butter, melted
1 cup brown sugar, packed
1/4 cup granulated sugar
1 egg + 1 egg yolk, room temperature
1 tablespoon vanilla extract
1 3/4 cup all purpose flour
3/4 teaspoon baking soda
1 teaspoon sea salt + more for sprinkling
1 1/4 cup semi sweet chocolate chips
12 Reese peanut butter cups
Instructions
1. Unwrap the Reese peanut butter cups and place them in the freezer while preparing the dough.
2. In a large bowl, mix melted butter, brown sugar, and granulated sugar until smooth.
3. Add the egg, egg yolk, and vanilla extract, then mix well.
4. In a separate bowl, combine flour, baking soda, and salt.
5. Gradually mix dry ingredients into wet ingredients until just combined.
6. Fold in chocolate chips gently.
7. Scoop cookie dough, flatten it, place a frozen peanut butter cup in the center, and wrap dough around it.
8. Chill dough balls for at least 30 minutes.
9. Preheat oven to 350°F and line a baking sheet with parchment paper.
10. Bake cookies for 12 minutes until edges are golden and centers remain soft.
11. Allow cookies to cool before serving.
Notes
Freeze peanut butter cups to keep the center intact.
Do not overmix the dough to maintain soft texture.
Remove cookies while centers are slightly underbaked for a gooey finish.
Use standard size peanut butter cups for best results.
