Ingredients
¼ cup + 2 tablespoons all-purpose flour
2 tablespoons sugar
¼ teaspoon baking powder
¼ teaspoon cinnamon
¼ cup milk, at room temperature
2 tablespoons salted butter, melted and cooled
½ teaspoon pure vanilla extract
1 tablespoon sugar (for topping)
¼ teaspoon cinnamon (for topping)
Instructions
In a small bowl, whisk together flour, sugar, baking powder, and cinnamon until well combined.
Add milk, melted butter, and vanilla extract and stir until the batter is smooth.
Scoop a spoonful of batter into a tall 14-ounce microwave-safe mug.
Sprinkle a bit of the cinnamon sugar topping over the batter.
Repeat the layers, ending with cinnamon sugar on top.
Microwave on high for 60 to 90 seconds, depending on microwave strength.
Let cool slightly before enjoying warm.
Notes
Use a 14-ounce mug with straight sides to avoid overflow and ensure even cooking.
Adjust the microwave time based on wattage—start with 1 minute and add time if needed.
Salted butter adds a flavor boost, but unsalted works too.
This recipe is egg-free and great for single-serve desserts.
