Description
A warm, tropical vanilla coconut cottage cheese mug cake that’s high in protein, naturally sweetened, and ready in just 5 minutes.
Ingredients
2 tbsp cottage cheese
½ ripe banana, mashed
1 tbsp coconut flour
1 egg or flax egg
½ tsp vanilla extract
Optional: 1 tsp shredded coconut
Optional: pinch of cinnamon
Optional: 1 tsp maple syrup or honey
Instructions
1. Mash banana in a microwave-safe mug until smooth.
2. Add cottage cheese, egg, and vanilla. Mix well.
3. Stir in coconut flour. Add optional sweetener or spices if using.
4. Microwave on high for 60–90 seconds, until center is set.
5. Let cool for 1 minute. Serve warm with desired toppings.
Notes
Swap cottage cheese with almond yogurt for a dairy-free version.
Top with Greek yogurt, almond butter, or fresh fruit.
Chill after cooking for a pudding-like texture.
Pre-mix batter and store for up to 24 hours before microwaving.
