1. Preheat oven to 350°F (177°C) and line two baking sheets with parchment paper.
2. Add cottage cheese to a blender and blend until completely smooth.
3. In a large bowl, whisk together almond flour, cocoa powder, and brown sugar alternative.
4. Add blended cottage cheese and mix until a thick dough forms. Knead if needed. Add a small splash of water if dough is too dry.
5. Use a 1.5 tbsp cookie scoop to portion dough. Roll into balls with slightly wet hands.
6. Place on baking sheet and flatten into thick round disks about 1/2 inch thick.
7. Bake for 17–20 minutes until cookies are puffed and set.
8. Let cookies cool completely on the baking sheet before removing.
Notes
Use 4% high-protein cottage cheese for best results. Avoid low-fat versions.
Blend cottage cheese until fully smooth for even texture.
Use superfine almond flour, not regular almond flour.
If dough feels dry, knead longer before adding liquid.
Store cookies in fridge or freezer in airtight container.
Optional: add sugar-free chocolate chips or nuts for variation.
