Instructions
1. Line a baking sheet with parchment paper.
2. Add oats, peanut butter, maple syrup, and carrots to a bowl and mix until thick dough forms.
3. Adjust texture with more oats or peanut butter if needed.
4. Scoop 1.5 tbsp dough, roll into balls, flatten into disks.
5. Chill in fridge for 30–60 minutes until firm.
Notes
Use finely shredded carrots for best texture.
Use natural peanut butter only.
Store in fridge for freshness.
Optional: add cinnamon, nuts, or raisins.
