2. Add the cottage cheese, egg, oat flour, maple syrup or honey, baking powder, cinnamon, and salt to a microwave-safe mug.
3. Stir until fully combined.
4. Fold in the diced apple.
5. Microwave for 90 seconds to 2 minutes until set.
6. Let cool slightly before serving.
Notes
Use finely diced apples for even cooking.
Do not overcook the cake or it may become dry.
Almond flour can replace oat flour for a lower-carb option.
Allow the cake to rest for 1–2 minutes before serving.
Top with chopped walnuts or an extra sprinkle of cinnamon if desired.
