2 large eggs

1/2 cup sour cream (120 ml)

1 1/2 cups mashed ripe bananas

Cream Cheese Frosting

1/2 cup unsalted butter (112 grams), softened

8 ounces full-fat brick-style cream cheese (226 grams)

34 cups powdered sugar (330440 grams), sifted

1/2 teaspoon cinnamon (optional)

1 teaspoon vanilla extract

1/4 teaspoon salt

12 tablespoons heavy cream, if needed

Instructions

1. Preheat oven to 350°F and grease a 10×15 inch jelly roll pan.

2. Whisk flour, cinnamon, baking soda, and salt in a bowl.

3. Cream butter, granulated sugar, and brown sugar until smooth.

4. Add eggs and vanilla and mix until fully combined.

5. Mix in sour cream and mashed bananas.

6. Gradually add dry ingredients and mix gently until just combined.

7. Spread batter evenly in pan and bake 24–28 minutes until golden and a toothpick comes out clean.

8. Cool completely before frosting.

9. Beat butter until smooth, then add cream cheese and mix well.

10. Add powdered sugar, cinnamon, vanilla, and salt gradually.

11. Adjust thickness with heavy cream if needed.

12. Spread frosting over cooled bars and chill before slicing.

Notes

Use full-fat brick-style cream cheese for stable frosting.

Measure flour correctly by spooning and leveling.

Do not overmix batter.
