Ingredients

4 tablespoons all-purpose flour

2 tablespoons brown sugar

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

1 pinch salt

3 tablespoons finely grated carrot

1 1/2 tablespoons vegetable oil

3 tablespoons milk (dairy or plant-based)

1/4 teaspoon vanilla extract

1 tablespoon chopped walnuts or raisins (optional)

Instructions

1. Whisk together flour, brown sugar, baking powder, cinnamon, nutmeg, and salt in a small bowl.

2. Add grated carrot, oil, milk, and vanilla. Mix until combined, being careful not to overmix.

3. Fold in nuts or raisins if desired.

4. Pour the batter into a microwave-safe mug, filling it halfway.

5. Microwave for 1–1½ minutes, checking after 1 minute. The top should look set but moist.

6. Cool for 1 minute and enjoy warm. Top with cream cheese frosting or powdered sugar if desired.

Notes

Finely grate carrots for best texture.

For vegan or dairy-free, use coconut oil and almond milk.

Store covered in the fridge for up to 24 hours; reheat for 15 seconds before serving.
