Ingredients
4 tablespoons all-purpose flour
2 tablespoons sugar, such as white sugar, brown sugar, coconut sugar, or erythritol
1/2 teaspoon baking powder
1 1/2 tablespoons oil or melted butter
3 tablespoons milk
1 chai tea bag
Instructions
1. Measure 3 tablespoons of milk into a microwave-safe cup and microwave for about 20 seconds, or until warm.
2. Place the chai tea bag in the warm milk and let it steep while you prepare the remaining ingredients.
3. Add the all-purpose flour, sugar, and baking powder to a small bowl.
4. Add the oil or melted butter and stir to combine.
5. Remove the tea bag and gently squeeze it over the milk to release more chai flavor.
6. Pour the chai-infused milk into the bowl with the other ingredients.
7. Mix everything together until a smooth batter forms and no dry flour remains.
8. Lightly grease a microwave-safe mug or ramekin.
9. Pour the batter into the prepared mug.
10. Microwave for 60 seconds.
11. Check the center. If it needs more time, microwave in 15-second intervals until cooked.
12. Let the mug cake cool for 1 minute, then serve warm.
Notes
Microwave wattage and mug size can change the cooking time.
Start with 60 seconds, then add only 15 seconds at a time to prevent dryness.
Use a 1:1 gluten-free flour blend for a gluten-free mug cake.
