1. Add cottage cheese, vanilla extract, egg, cocoa powder, sweetener, and peanut butter to a blender.
2. Blend until completely smooth and creamy.
3. Pour the batter into a microwave-safe mug, small baking dish, or ramekin, leaving room for it to rise.
4. Press the piece of 70% dark chocolate into the center if using.
5. Sprinkle dark chocolate chips on top.
6. Microwave on high for 1 minute 30 seconds to 2 minutes depending on your microwave power.
7. Let the mug cake rest for 1–2 minutes before serving.
8. Enjoy warm with whipped cream, peanut butter, coconut cream, or fresh berries if desired.
Notes
Use high-quality unsweetened cocoa powder for the richest chocolate flavor.
Do not overcook the mug cake to keep the center moist and fudgy.
Add a scoop of chocolate protein powder for extra protein.
Store leftovers in the refrigerator for up to 2 days.
