Instructions
1. Blend the cottage cheese until completely smooth.
2. Add the egg, maple syrup, and vanilla extract, then blend again.
3. Stir in the oat flour, baking powder, cinnamon, and salt until just combined.
4. Mix the crumble topping ingredients in a small bowl.
5. Pour the batter into a microwave-safe mug.
6. Sprinkle the crumble evenly over the batter.
7. Microwave for 90–120 seconds, depending on your microwave.
8. Let the mug cake rest for 1 minute before serving.
Notes
Blend the cottage cheese first for the smoothest texture.
Do not overmix the batter.
