Soft and chewy gingerbread cheesecake cookies stuffed with creamy cheesecake filling and rolled in warm holiday spices.

For the Cheesecake Filling6 oz (170 g) cream cheese, cold3 tbsp (38 g) granulated white sugar1/2 tsp vanillaFor the Spiced Sugar6 tbsp (75 g) granulated white sugar1/2 tsp ground ginger1/2 tsp ground cinnamon1/8 tsp ground allspice1/8 tsp ground nutmeg1/8 tsp ground clovesFor the Gingerbread Cookies2 1/2 cups (313 g) all-purpose flour2 1/2 tsp ground ginger2 1/2 tsp ground cinnamon1/2 tsp ground nutmeg1/4 tsp ground allspice1/4 tsp ground cloves1/2 tsp salt1/2 tsp baking soda3/4 cup (168 g) unsalted butter, softened3/4 cup (165 g) light brown sugar2 egg yolks, at room temperature1 tsp vanilla1/3 cup (113 g) unsulphured molasses

Instructions

1. Line a small baking sheet with parchment paper.

2. Mix cream cheese, sugar, and vanilla until fluffy.

3. Scoop cheesecake filling into 18 small portions and freeze until firm.

4. Whisk sugar and spices together for the spiced sugar coating.

5. Preheat oven to 350°F and line baking sheets with parchment paper.

6. Whisk flour, spices, baking soda, and salt together.

7. Beat butter and brown sugar until fluffy.

8. Add egg yolks, molasses, and vanilla and mix until smooth.

9. Combine dry ingredients with wet ingredients to form cookie dough.

10. Scoop dough into balls and flatten slightly.

11. Place frozen cheesecake filling inside each dough ball and seal completely.

12. Roll cookie dough balls in the spiced sugar.

13. Bake 6 cookies at a time for 11–12 minutes.

14. Cool on baking sheet for 10 minutes before transferring to a wire rack.

Notes

Freeze the cheesecake filling completely before baking.

Do not overbake the cookies.

Store cookies in the refrigerator because of the cream cheese filling.
