1. In a large microwave-safe mug, combine the quick cooking oats, cinnamon, brown sugar, milk, and water. Stir well until everything is evenly mixed.
2. Microwave on High for 1 minute. Remove carefully and stir. Continue cooking in 20 to 30-second intervals until the oatmeal becomes thick and creamy. Watch carefully to prevent overflowing.
3. Place the softened cream cheese in a small microwave-safe bowl and microwave for about 10 seconds until soft.
4. Add the confectioners’ sugar, milk, and vanilla extract. Stir until smooth and creamy.
5. Spoon or swirl the cream cheese glaze over the hot oatmeal.
6. Top with toasted pecans if desired and serve immediately.
Notes
Use a large (12 to 16-ounce) mug to prevent the oatmeal from bubbling over.
