Ingredients
4 tablespoons all purpose flour
1 tablespoon white sugar
1/2 tablespoon brown sugar
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon cinnamon
3 tablespoons milk
1/2 tablespoon vegetable oil
3 tablespoons shredded zucchini
1/2 tablespoon chopped walnuts optional
Instructions
1. In a microwave safe mug, whisk together all ingredients except zucchini and walnuts until smooth.
2. Shred the zucchini and pat lightly with a paper towel to remove excess moisture.
3. Measure three tablespoons of zucchini and stir into the batter along with walnuts if using.
4. Microwave for 1 minute to 1 minute 15 seconds until the top looks set.
5. Let cool briefly before eating.
Notes
Use a mug that holds at least 8 ounces.
Cooking time may vary depending on microwave wattage.
Pat zucchini lightly, do not fully dry it.
